Spicy Thai curry with beef

If you like spicy food, then you should definitely try nuea gaeng prik. It is probably one of the hottest and spiciest dishes in Thai cuisine. It can be found on almost every corner in Thailand. It is less well known in Germany as it is too spicy for the average Western palate. It is a very simple dish. The beef should be tender and not chewy, while the curry has a thick consistency and is not runny. The recipe combines spiciness and its salty taste with flavor from the curry paste in a unique way.

Cooking instructions

INGREDIENTS FOR 2 PORTIONS

  • 500 g tender beef tenderloin

  • 1 teaspoon palm sugar

  • 5 kaffir lime leaves, torn

  • 2 cups of water

  • Roasted dried chilies for garnish

Curry paste (whisk all ingredients together):

  • 6 large dried chilies, deseeded, soaked, then squeezed out excess water, finely chopped

  • 1 teaspoon ground sea salt

  • ¼ cup peeled shallots, finely chopped

  • 1½ tablespoons peeled garlic, finely chopped

  • 1½ tablespoons galangal, finely chopped

  • 3 tablespoons lemongrass, finely chopped

  • 1 tablespoon turmeric, finely chopped

  • 20 peppercorns

  • 1½ tablespoons shrimp paste


PREPARATION TIPS

  1. Use tender beef such as loin or fillet. This shortens the cooking time.

  2. Buy the beef the day before cooking and chill it to allow the natural tenderizing process for meat to work.

  3. Slicing across the grain of the beef helps to tenderize it and not make it tough.


STEP 1

Wash the beef and pat it dry. Slice into thin strips and set aside.

STEP 2

Put 1 cup of water in a saucepan and bring to the boil. Add the curry paste and then the beef. Once the beef is almost cooked, add the sugar and stir. Add another cup of water and reduce the heat to low. Cook until the beef is tender and the curry thickens. Tear the kaffir lime leaves into the curry and remove from the heat.

STEP 3

Serve in a bowl and garnish with fried dried chilies. Serve with a selection of fresh vegetables.
