Beef with spicy dip

Yam refers to the hot and sour dressing, which is balanced with palm sugar. Nuea Yang means grilled beef. A ribeye steak with its fatty center or a rump steak with a fatty edge is ideal for this delicious salad. The dressing contains no oil, so the fatty meat provides the necessary flavor - it also smells wonderful and should not be too dry. This salad tastes even better with a spicy dipping sauce (Jaew). It should be served lukewarm - perfect for warmer days.

Cooking instructions

INGREDIENTS FOR 2 PORTIONS

1 beef tenderloin (400 grams)

Hot dipping sauce (Jaew): Mix all the ingredients together and season to taste.

1 tbsp dried bird's eye chillies, roasted and finely ground

1 tsp rice, roasted and finely pounded

1 tbsp peeled shallots, finely chopped 1 stalk long coriander, finely chopped

2 tbsp fish sauce

2 tbsp lime juice

1 tsp fish sauce

4 tsp sea salt, ground


PREPARATION TIPS

  1. Use fatty beef, as this makes the beef smell more intense after grilling. Ribeye steak with its fatty center or a rump steak with a fatty edge is ideal.

  2. Marinate at room temperature for approx. 1-2 hours to tenderize the beef. However, the beef should not be kept outside the fridge for more than 2 hours, otherwise the heat will degrade the quality


STEP 1

Wash the beef and pat dry. Cut the beef into thin slices, but leave the bottom part attached to spread the beef and obtain a larger piece.

STEP 2

Mix with fish sauce and salt. Marinate for 1-2 hours or overnight in the fridge.

STEP 3

Grill over a medium heat on a charcoal grill. Grill on both sides, then remove and leave to cool. Cut into bite-sized pieces. Serve on a plate with the spicy dipping sauce and fresh vegetables such as cucumber, cabbage, Thai basil and lemon balm leaves as well as steamed sticky rice.
