Chili dip (Thai style)

Nam prik noom is one of the tastiest chili dips you will ever come across, in my opinion. "Prik noom" stands for the long, green type of chili that is typical of the northern part of Thailand. You can find it locally in almost every good supermarket. Overall, this dip has a mild, aromatic flavor. The chilies are well cooked and have a soft texture. The pickled fish smells wonderful. The tomatoes, garlic and shallots are well blended together and give a good aroma.

INGREDIENTS FOR 2 PORTIONS

  • 7 green spur chillies (prik noom)

  • 5 Thai sida tomatoes

  • 3 garlic cloves

  • 6 Thai shallots

  • 1 tablespoon boneless, fermented fish, finely chopped

  • 1 teaspoon fine sea salt

  • 1 tablespoon spring onions, finely chopped

  • 1 tablespoon coriander, finely chopped

Not for eating, only for cooking: Banana leaf

Fresh vegetables to taste: cucumber, snake bean, acacia, winged bean

Cooked vegetables to taste: snake bean, eggplant, water spinach, banana flower, agasta tip, agasta flower, pumpkin, winter melon

Side dishes: pork crackling and boiled eggs


PREPARATION TIPS

  1. The green spur chilies (prik noom) must not be beaten too finely.

  2. Prik yuak (a more common type of spur chilli) can be substituted for prik noom. However, they must be roasted before use, otherwise they will taste unpleasant.

  3. Large shallots can be substituted for small Thai shallots, but they are not as fragrant and are more moist.


STEP 1

Wash the green spur chilies, shallots, garlic and tomatoes well, then set aside and drain. Grill or fry the vegetables until cooked. Peel the green chilies, shallots and garlic thoroughly.

STEP 2

Wipe the prepared banana leaf clean, place the chopped fermented fish on the leaf and wrap it completely to enclose it a few times. Then sear until fragrant.

STEP 3

Roughly beat together the green chilies, shallots, garlic and salt. Add the fermented fish and tomatoes. Mash well.

STEP 4

In a bowl, sprinkle with spring onions and coriander. Stir and mix well. Serve with cooked or fresh vegetables, pork cracklings and boiled egg to your liking.
