Rice noodles with spicy pork sauce
It's spicy, sour, full of herbs and pork flavors, but also light and so filling at the same time. It looks so simple, but it's full of flavor. The soup has a thick consistency due to the tomatoes. The pork and beef are tender and perfectly blended with the tomatoes. The dish smells of fermented soybean leaves and is not too spicy.

INGREDIENTS FOR 6 PORTIONS

500 grams of minced meat

500 grams pork ribs, cut into small pieces

500 grams of minced beef
-
1½ pork blood, cut into 2.5 x 2.5 cm pieces
-
12½ cups of water
-
3 cups local small tomatoes, seeds removed and halved
-
10 dried cotton tree flowers
-
¼ cup spring onions and coriander, finely chopped
-
1 tablespoon ground sea salt
-
¼ cup vegetable oil
-
1 kg steamed rice noodles
-
500 g bean sprouts, stringy tails removed
-
1 cup pickled lettuce, chopped and sautéed in oil
-
4 tablespoons of fried garlic
-
A few deep-fried, dried bird's eye chilies or ground chilies sautéed in oil

5 lime wedges
Curry paste: finely crush all the ingredients together.

7 large dried chilies, deseeded, soaked in water and squeezed dry, finely chopped
-
1 teaspoon of ground sea salt
-
3½ tablespoons peeled shallot, finely chopped
-
1½ tablespoons peeled garlic, finely chopped
-
1½ tablespoons galangal, finely chopped
-
3 tablespoons lemongrass, finely chopped
-
2 tablespoons fresh turmeric, finely chopped
-
1 teaspoon coriander roots, finely chopped

4 tablespoons roasted, fermented soybean leaves, finely crushed
PREPARATION TIPS

Serve with 2-3 bunches of rice noodles (kanom jeen) by pouring the soup over the noodles, sprinkle with coriander, spring onions and fried garlic.

Place the bean sprouts and pickled lettuce on a side plate together with the lime. The rice noodles can also be served with the soup in a separate bowl. The bean sprouts, pickled salad and other garnishes can also be served in a small separate bowl.

Serve the fried bird's eye chilies (or oil-fried ground chilies) in a small bowl for an added sour and spicy flavor.

Pork cracklings can be used as a garnish.

Thai Sida tomatoes are preferred for this dish as they taste better than other tomato varieties due to their sweet and sour flavor.
STEP 1
Simmer the pork ribs with 12 cups of water in a pot until the pork ribs are tender. Soak the cottonwood flower in water, then squeeze dry and cut in half by hand.
STEP 2
Fry the curry paste in a wok with a little oil until fragrant. Add the pork and beef. Stir to mix well. Add the ½ cup of water and continue cooking. Once the meat is cooked, add the tomatoes and cottonwoods. Sauté until well browned.
STEP 3
Add the mixture to the pork rib soup. Add the pork blood. Bring to the boil once until fragrant, then reduce the heat. Simmer until the pork, beef and pork ribs are tender.

Then salt and season to taste. The salty flavor should dominate.
